" Washoku, traditional dietary cultures of the Japanese" was designated as a UNESCO Intangible Cultural Heritage of Humanity. Japan has developed a huge variety of washoku for a long time. Being good for health, washoku is attracting attention from all over the world. As a global reputation of "sushi" shows, rice and fish are central foodstuffs in washoku. In this lecture, functionality of rice and fish is explained on the basis of agricultural and fisheries research, and the task of washoku is discussed.
